Rice-less Risotto Attempt


In an effort to eat more veggies, I’ve been seeking out recipes that replace starch-based meals with veggie alternatives. Sarah Britton’s Miraculous Rice-less Risotto with Ramps and Asparagus was just the ticket for the start of a sort-of long weekend. She replaces the rice in risotto with chopped up asparagus and tops it with a gooey mix of asparagus, wild leeks and cheese. Since my local store didn’t have white asparagus or wild leeks, I subbed in green asparagus and normal leeks in that part of the recipe. Although the result is slightly different, it was uber delicious, especially with a glass of Peju’s white and red Provence. Dinner success! Sarah’s beautiful blog, My New Roots, has many of these inventive recipes that take old favorites and reinvent them. I’ve been dying to try her raw brownie. Maybe next time!
