Paella

Being a gluten-free eater, I love dishes that are typically free of gluten and taste delicious. Paella is one of my favorites and fits the bill perfectly. It can be hearty during the winter or light during the summer and can accommodate veggies, chicken, seafood and sausages. I learned to make it years ago and have since cooked it many times, improvising the recipe with what I’m in the mood for that day. Unfortunately, my experiments sometimes go awry. I made paella for my family while I was home, but went a little overboard on the spices and set my family’s mouths on fire. I think they will be more wary when eating my creations in the future! One good tip I’ve found is that Trader Joes has the cheapest saffron (~$6 compared to $20-$30 elsewhere).
